Day 27- Where Did Summer Go?

Today was cool, cloudy and dark. All day it felt like a huge rainstorm was sitting over the house but it didn't spill a drop. For breakfast I toasted a frozen waffle from the Paleo Parents cookbook, Eat Like a Dinosaur, for Munchkin and warmed up the leftover spaghetti and meatballs for myself. Pretty good eats, and on the table in less than 5 minutes.

Most of the day was spent just being lazy. I don't know why but the coolness and how dark it was outside (I had to turn on most of the indoor lights to chase away the shadows) just had me in a dull funk. Even Munchkin was quieter than normal and content to cuddle on the couch for most of the day.

I nixed the idea of grilling and went with a simple baked chicken for supper instead. I did try to go out of my rut of steamed/roasted veggies for sides by attempting a mashed cauliflower and carrot "mock potatoes" thing-it was ok, but not a lot of flavor and it had the consistency of baby food. I'm not sure if I would do it again. All in all the highlight of supper was the watermelon and mint salad I threw together for a dessert. My culinary brilliance was definitely not shining today.
